Canadian Chefs And Dishes

First off I thought it was important to look into any famous Canadian chefs and dishes, to gain a better understanding of the canadian culture and any popular dishes they have, I'm looking more towards desserts and sweets, and to whether or not they would be a great way of symbolising Canada. What I mean is that people can look at the level and think Canada through the use of food, without been directly informed through use of items such as flags and text.

First off what I noticed was the amount of French influenced dishes, which is understandable as Canada is well known for its french distributions such as the province of Quebec. We had discussed between the team that part of the Canadian level could be influenced a little by the Canadian-Franch connection. Maybe like a little side dish of the main desert. We thought about the idea of Chocolate Fondue waterfall, even though it's the main dish of Switzerland it is a very well known French tradition, and I am surprised how close the french province of Quebec is to Niagara Falls, so could be used as a kind of border between the Canadian Dish and the American Dish, which could work well.

Was just searching on the web and to my surprise Canada has a whole network channel devoted to Food, they have a great website with 1000's of recipe's and a whole variety of different type's of desserts from colour to texture which is essential, This is great source of research for when it comes to designing the environment. To my added surprise they also have a programme called :

Top Chef: Just Desserts.

Each episode of Top Chef: Just Desserts holds two challenges for the pastry chefs: the first is a Quickfire test of their basic abilities and the second is a more involved Elimination Challenge designed to test the versatility and inventiveness of the pastry chefs as they take on unique culinary trials such as working with unusual and exotic ingredients or catering for a range of demanding clients.

The whole season can be viewed on the internet, so I think it will be defiantly worth a watch, as a great source of gaining potential ideas, heres one of the episodes of Youtube for us to have a look at.
